The Big Breakfast!!

It was brilliant to see so many (over 80!) parents, grandparents and children enjoying our farmhouse breakfast at 8 o'clock this morning. Mandy, Zoe and Vina spent all yesterday morning preparing and cooking delicious food, which made the family room smell wonderful!

The menu was:

Branflake breakfast pancakes
Porridge
Cheese and bacon muffins
Eggy bread
Crumpets
Oaty apple and orange squares

Sunshine juice
Chocolate and raspberry smoothies

I can personally recommend the muffins and the fruity squares - absolutely delicious!

Some parents asked for the recipe for the branflake breakfast pancakes, which wasn't included in the recipe leaflet that we gave out:

Branflake Breakfast Pancakes

150g self-raising flour
1 medium egg
2 tablespoons clear honey
150ml semi-skimmed milk
25g sultanas
50g bran flakes

  1. Place the flour in a large bowl and mix in the egg.
  2. Gradually add the honey and then milk and whisk to form a batter.
  3. Stir in the sultanas and bran flakes.
  4. Heat a little oil in a frying pan and spoon in a tablespoon of mixture for each pancake.
  5. Cook gently for 1-2 minutes, turn over and cook for one more minute until golden.
  6. Repeat until all the mixture has gone!
  7. Serve drizzled with honey and a scattering of fresh fruit.
